Natural/Dry method. This is the oldest preparation method, and has been in use for hundreds of years. Farmers place coffee cherries on a flat surface where they are then washed dried in the sun. This process normally takes about 2-6 weeks, and the beans are raked and rotated so that they roast evenly.
Naturals tend to have more fruit and fermented flavors because the bean has more time to interact with the natural sugars from the cherry as enzymes break down the mucilage around the bean.
